Healthy, delicious, and easy to make zucchini boats will be the rave at your next get-together, event, or entertaining guests. They can be served as appetizers or as a side dish at dinner.
They are Paleo, Keto, Mediterranean, and Vegan friendly!
4 medium, fresh zucchini, sliced in half
1/2 cup dairy-free cheddar shreds
1-2 Tbsp. fresh rosemary & thyme, minced
Smidge of extra virgin olive oil
Sea or Kosher salt & organic pepper to taste
Pre-heat oven to 350F.
Scrape out center of zucchini
Lightly brush both sides of the zucchini with olive oil and place on a foil-lined baking sheet.
Mix dairy-free cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper.
Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.
Can add cooked ground turkey, chicken or grass-fed ground beef to add some protein.
