This healthy Chinese chicken salad is sure to please your palate and is a family favorite. Loaded full of antioxidants, vitamins B, C and D, fiber, and phytonutrients. You will feel satisfied and full after enjoying this tasty, nourishing and healthy salad.
It's great by itself as a main meal, or on the side. The dressing is all natural, low in sugar and full of natural goodness. I'm a huge fan of Annie's plant-based products. You wouldn't even know you're eating something so healthy, without feeling deprived.
Ingredients
Red leaf lettuce
Green leaf lettuce
Mandarin oranges
Slivered almonds
Annie's Organic Sesame Ginger Vinaigrette
3-5 Air Fried chicken thighs (see instructions below)
Instructions
Wash and dry lettuce
Tear up lettuce into bite size pieces in a bowl (combining each lettuce)
Add 3-5 mandarin oranges (peeled and separated), or more or less depending on preference
Add in a handful of slivered almonds
Cut up chicken into bite sized pieces and toss into salad
Mix well and serve in individual bowls
Add dressing (a little bit goes a long way)
Enjoy!
Air Fryer Chicken Instructions
Place 3-5 (free-range) chicken thighs in air fryer (boneless/skinless)
Add Sea or Kosher salt & organic pepper to each side of chicken (to taste)
Set air fryer temperature to 360 and cook for 12-15 minutes (depending on size of air fryer)
