Air Fryer Parm Peppercorn Chicken & Garlic Thyme Potatoes

This easy air fryer chicken dinner will take you less than 30 minutes to prepare and cook. And oh boy is it delicious. This recipe can be doubled.


Parm Peppercorn Chicken




Ingredients:
  • 1/2 pound of chicken thighs (boneless/skinless)

  • G Hughes Sugar Free Parm Peppercorn Marinade

Instructions:
  1. Marinade chicken thighs in Parm Peppercorn marinade, minimum 2 hours. The longer you marinade the better it tastes.

  2. Preheat air fryer at 380° for 5 minutes

  3. Place chicken in air fryer (single layer)

  4. Cook for 10 minutes


Garlic Thyme Potatoes



Ingredients:
  • 1/2 pound baby red or Yukon gold potatoes

  • 1/8 tsp. Kosher salt

  • 1/8 tsp. Organic black pepper

  • 1/2 tbsp. Olive oil

  • 1 1/2 tbsp. Plant-based butter

  • 3 cloves garlic, minced

  • 1 tbsp. thyme leaves



Instructions:

  1. Cut potatoes into quarters

  2. Toss potatoes, salt, black pepper, and olive oil in a bowl until potatoes are evenly coated.

  3. Place the potatoes into the air fryer on top rack (accessory) and cook with chicken for 10 minutes.

  4. Combine butter, garlic, and thyme in a microwave-safe bowl and microwave for 30 seconds to 1 minute.

  5. Transfer cooked potatoes from air fryer into a large bowl and pour melted butter mixture over and mix.

Chicken and potatoes are done, serve immediately. Enjoy!
